Time spent with family is truly precious. Despite the rain-soaked, frigid {by southern standards} temps we had a wonderful trip to SC. If you stick with me here, I'm going to share with you one of my favorite Meatless Monday recipes to date. But first a quick recap.
We took a day-trip to Charleston for the Home and Garden tour. Sadly, I couldn't take any pictures while in the homes or gardens, but I snapped a quick pick of these succulent window boxes for my friend Meg, they remind me of her great idea for a table-top display.
I also made time for heaven on a plate otherwise known as shrimp and grits.
And took a quick whirl through South of Market {I'm on the hunt for prints like these}
We spent lots of quality time with the pup; here he is with his fresh cut. I miss the fluffy doodle look, but love him dearly all the same.
Ok, so now onto the Meatless Monday recipe that this post is all about. I've been dying to learn how to make lasagna, particularly the meatless variety for months. There is no better person to learn from than my Mother and Aunt Jan when it comes to matters in the kitchen. It took three people {a watchful pup} and two pitchers of mimosas to make the worlds most tasty veggie lasagna.
Here she is. Zucchinis, mushrooms, peppers mingled with cheese and noodles has to be one of the most satisfying meatless recipes I've tasted.
