I've learned so much in the last year by going meatless once a week. I've enjoyed it so much that I go meatless more often than not these days because I've found a plethora of dishes that are healthy, taste great and make me feel good about what I'm putting into my body.
Today, I'm about to go out on a limb and share with you my absolute favorite meatless dish I've made so far. Spiced Pumpkin and Yoghurt Pasta is ridiculously delicious, feeds a crowd and received a great review from even my father-in-law who is about as far from being vegetarian as they come.
